{"id":524,"date":"2012-09-06T21:19:50","date_gmt":"2012-09-06T21:19:50","guid":{"rendered":"http:\/\/www.creative-catalyst.com\/expect\/?p=524"},"modified":"2019-02-11T20:48:25","modified_gmt":"2019-02-11T20:48:25","slug":"a-successful-eggsperiment","status":"publish","type":"post","link":"https:\/\/www.creative-catalyst.com\/expect\/a-successful-eggsperiment\/","title":{"rendered":"a successful eggsperiment"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">andy has an ice-cream maker, &amp; over\nthe summer we&#8217;ve experimented with a few batches of ice-cream\nincluding coffee, caramel, frozen yoghurt, asparagus &amp; most\nrecently carrot (beetroot is next on the list to try). ice-cream\noften requires egg yolks &#8211; the carrot ice cream recipe asked for 7\nyolks &#8211; so the question is, what to do with the egg whites? a girl\ncan only take so much merangue. i searched the internet for things to\ndo with left-over egg whites, but pretty much everything was cake or\nsome other kind of sweet thing. we have a freezer full of ice-cream,\nwe don&#8217;t need more sweets!<br>\n<br>\negg white omeletes were the\nmain savoury option. but this evening, wanting to make spinach sauce\nfor pasta but missing the sour cream, i remembered the egg whites\nsitting quietly in the fridge (some of them are in the freezer for\nanother day). so i decided to try an eggsperiment, and use the egg\nwhites to make a creamy sauce. i did look first for a recipe online,\nbut didn&#8217;t find one, so i boldly made it up as i went &#8211; &amp; it was\nvery tasty.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.creative-catalyst.com\/expect\/wp-content\/uploads\/2019\/01\/eggsperiment1.jpg\" alt=\"Eggsperiment\" class=\"wp-image-137\" width=\"308\" height=\"231\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">first i sauted onions in butter, then added spinach which had been previously cooked (lightly) &amp; chopped. while this warmed, i beat the egg whites until they were firm but not too stiff. taking the pot off the heat, i folded the egg whites into the onion &amp; spinach mixture, &amp; stirred until it was well mixed &#8211; normally a no-no if you&#8217;re folding beaten egg whites into a souffl\u00e9 or macaroon mixture, but i knew the air was going to go out of it anyway in the sauce. i only beat it because i didn&#8217;t want the egg white to cook like a fried egg. then into the mixture i added small chunks of gorgonzola, and left it off the heat for the cheese to melt in, occasionally giving it a stir. when the pasta was cooked i combined everything in a big pot &amp; served it with grated parmesan. lecker! <br> <br>as for the ice cream &#8211; the carrot ice cream was not a total success, mainly because i used a recipe from the internet without thinking that the quantity was larger than the recipes in the ice-cream machine&#8217;s book; so the machine was too full &amp; it didn&#8217;t freeze while churning. however it froze overnight in the freezer &amp; tastes just fine. so when i make the rotebeet eis, i&#8217;ll remember to check the quantities!  <\/p>\n","protected":false},"excerpt":{"rendered":"<p>andy has an ice-cream maker, &amp; over the summer we&#8217;ve experimented with a few batches of ice-cream including coffee, caramel, frozen yoghurt, asparagus &amp; most<span class=\"read-more-link\"><a class=\"read-more\" href=\"https:\/\/www.creative-catalyst.com\/expect\/a-successful-eggsperiment\/\">Read More<\/a><\/span><\/p>\n","protected":false},"author":2,"featured_media":137,"comment_status":"closed","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[5],"tags":[],"class_list":["post-524","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-life"],"_links":{"self":[{"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/posts\/524","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/comments?post=524"}],"version-history":[{"count":1,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/posts\/524\/revisions"}],"predecessor-version":[{"id":525,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/posts\/524\/revisions\/525"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/media\/137"}],"wp:attachment":[{"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/media?parent=524"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/categories?post=524"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.creative-catalyst.com\/expect\/wp-json\/wp\/v2\/tags?post=524"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
